Education History
After completing a Bachelors degree from the Accreditation Council for Education in Nutrition and Dietetics (ACEND) program at UC Davis, I am verified to have completed a Didactic Program in Dietetics as of 2021. By the beginning of April 2023, I completed my Master of Science in Clinical Nutrition didactic academic studies. From April 2023 to November 2023, I completed five supervised practice clinical education rotations including in a prison healthcare facility, California WIC clinic, ambulatory care at a Kaiser location, food service applications in a school district, and a confidential food bank based wellness nutrition counseling service with grocery delivery for those with serious medical conditions.
Research Experience
On November 10th, 2023, I presented my research on plant-forward meals on a small graduate campus to my peers, faculty, friends, and family for my MSCN Poster Session preceding my pinning ceremony. This capstone study (N=274) was performed using a Qualtrics-based survey to assess student, staff, and faculty’s perceived acceptance of plant-forward and vegan meals in the University of Pacific Sacramento campus cafeteria to be used by the university as marketing research. Factors looked at in this study include ranked food purchasing attributes, dietary restrictions and preferences, and gender, amongst other demographic data collected. This study was also presented to UoP’s Student Life administration and was submitted to CANDAC’s 100th anniversary.
